This just might be our Summer of 2018 FAVE salad recipe!  It includes so many healthy ingredients and yet is tastes good in fact that our youngest son, by far our pickiest eater DEVOURED it!  Ryan and I made this salad over the weekend and fell in love with it!  We can't take all the credit for this one since we found it in a magazine but we made our own tweaks with ingredients that we think take it to a whole new level!  
If you have an herb garden growing in your own yard this recipe is perfect because if your garden looks like our right now, you're probably wondering what to do with all the herbs now that they are growing so quickly.  

Super Greens and Seeds Quinoa Salad Recipe

1 Cup uncooked Quinoa
1 Large Hand full of Kale - Finely Chopped
1/4 Cup Finely Chopped Cilantro
1/4 Cup Finely Chopped Basil
1/4 Cup Finely Chopped Dill
1/4 Cup Finely Chopped Mint
1/4 Cup Finely Chopped Chives
2 Carrots, Shredded
10 Spears of Asparagus, shaved (we didn't have asparagus so I sauteed some sliced garlic scapes instead)
1/4 Cup dried gogi berries
1/2 Cup of broccoli florets, finely chopped
1/2 Cup mixed nuts/seeds (we used hemp seeds, pumpkin seeds, sunflower seeds)

1/2 Onion
1 Avocado
1/3 Cup White Wine Vinegar
1/2 Cup Grape Seed Oil
2 TBS water
2 Cloves Garlic
2 TBS minced ginger
1 small stalk of celery from the interior of the head
1-2 TBS honey
1/2 TBS fresh squeezed lemon juice
1/2 Tsp sea salt
Fresh Ground Pepper to taste

Step one:
Rinse Quinoa in a strainer, put into a small pan with 1 1/2 cups water and 1 tsp sat, and bring to a boil.  Reduce the heat and simmer covered for 15 minutes, fluff with a fork and let cool with lid off.  When the quinoa is cooled carry on with Step two. (We put the cooked Quinoa in the fridge for a few minutes to speed up the cooling process)

Step Two:
In a large mixing bowl mix together the chopped kale, herbs, vegetables, gogi berries and quinoa

Step Three:
To Make the Dressing: Combine all the ingredients in a blender and blend until smooth

Step Four:
Add about 3/4 of the dressing and toss - Add the seeds/nuts and toss lightly 

Step Five:
Add Salt and Pepper to taste and more dressing if desired.   ENJOY!
